Muffin Better Than This

I recently decided to make my life more difficult, and go dairy free, along with being gluten free, because who needs cheese right?
I'm actually sobbing right now, tears rolling down my face because that was such an utter lie, everyone needs cheese and do not be me, do not give up cheese because it is beautiful and I am a complete idiot.
In all seriousness, I have always had an allergy towards dairy and it was relatively easy to cut out of my diet (minus the cheese, clearly) because I have always drank soy milk, or coconut and almond milk.
So, I was getting quite the sweet tooth and the first thing that came to mind were these muffins that Zack and I made a few months ago.
I am warning you, that they are highly addictive. I basically became an actual muffin with the amount I ate. It was a low point in my life but high point for my taste buds. So, let's get started and make some semi-guilty free muffins!
What you will need:
This is a pre-made gluten free muffin batter, so it makes your life much easier. You should be able to find the King Arthur brand in any gluten free section. It's by far my favorite gluten free mix!
Do not let this dairy free chocolate scare you. It tastes EXACTLY like chocolate. I have no reason to lie. This dairy free chocolate also has a semi-sweet option for those who aren't dark chocolate fans….which seems like a crime.
Nothing special in this regard. I got the bigger can because I tend to add more than the smaller can provides to add more flavor. This ended up being a little much and I had a lot left over but I guess I'll have some in hand for my next batch of muffins.
You only need one pecan per muffin to add on top so a small bag will do. Plus, nuts are so darn expensive!

I ended up having baking cups on hand so i never used these and can't really provide you with any details on how these worked. Any sort of baking cups will do. Nothing special is needed.
For my vegan friends, there are modifications you can so you don't have to use eggs. The only part of these muffins that make it not vegan is I added eggs, but you can substitute by adding more oil or almond milk.
You will start off by reading the instructions on the muffin mix.
I used vegetable oil for mine.
Just your good old fashioned eggs!
I'm dairy free and this is the “milk” I live on. I always get unsweetened because I don't think it's necessary to have added sugar when it tastes just as good if not better without it. I also like the mix of both the almond and coconut.
You need pumpkin pie spice! You need this! You have to have it! Just adds to the entire pumpkin flavor. If you don't have this on hand, cinnamon will do just fine.
Once all of the ingredients for the muffin mix is in, now it's time to add in the “add in’s.” Here it shows I put in about a cup and a half of pumpkin purée but I'd go ahead and add two cups. The muffins turned out much more moist than I've ever made them and it was delicious. Also, don't be afraid to taste the batter. If you feel like you need more just pile it all in!
Keep on adding more! You can't ever have too much pumpkin!
Now pile in the chocolate chips. Don't be shy with these either! The more, the better!

Oooops. I couldn't stop adding them to the batter.
Now place your muffin cups in a muffin baking sheet! Hold up though! Before you add the mix to the cups spray the cups (meaning the paper cups) with a non-stick spray! They peeled right off after I baked them and I will always do this now!
Fill the paper cups almost all the way full. They don't rise like crazy so don't be afraid to fill them!
Now add on your pecans right on top of each muffin.
Also, maybe sprinkle some of the pumpkin spice on top but you should have added the pumpkin spice to the mix! Adding more on top could never hurt.
After the are ready to go, plop them into the oven according to the instructions on the box. I baked mine for about 18 mins.
