Curry Up, Something's Cookin'

Don't curry, be happy! It's a new year but the puns are here to stay, I won't apologize. They are just too punny to give up!
Okay, I'm done.
My boyfriend and I got home from the holidays after two and half weeks, and came home to a smelly fridge. Note to self: clear out your fridge if you're going to be gone longer than a week. So, we had to purge everything and we were left with an empty, still slightly smelly fridge.
We decided we were too lazy to do a major grocery shop, so we would leave that until the weekend but would get ingredients to make dinner and then a few things to get by the rest of the week. My boyfriend was “starving” so I wanted to make something that was quick so he wouldn't die on me.
The first thing that came to mind was…
Chicken curry!
I love all the flavors curry has, while being hearty but also a lightness to it.
Now, if you're looking for a deconstructed recipe to make curry, then you're at the wrong place. Unfortunately, this is a lazy version for those who don't have the patience to find ingredients to make it and then the perseverance to cook it. That's not to say I will never put a homemade curry recipe up because I'm thinking of making a crock pot version of one this weekend! So stay tuned for that.
But for the lazy folks out there, such as myself, here is a simple version that tastes pretty darn great!
Ingredients:
2 jars of Sharwood’s Red Curry (there are different flavors of curry such as a green curry available too)
1 package of Chicken breasts (at least 3 breasts)
1 cup of onions chopped but thicker slices
Pinch of basil
As much as your taste buds desire of Garlic powder and crushed red peppers
Now let's start cookin!
Cut chicken breasts into small or medium sized chunks.
On a large skillet add the chicken with a little bit of vegetable oil.
Set stove top temperature to medium heat.
Chop up onions and add it to the skillet.
Add pepper and salt if desired.
Cook until chicken is cooked all the way through.
After the chicken is cooked, turn down heat ever so slightly, and add the red curry sauce right on top.
Mix the chicken and onions with the red curry sauce and then put a lid on top and let the curry simmer until heated up.
Add basil, garlic powder and crushed peppers as the curry heats up.
Mix it all together.
I'm not kidding when I say this should all together take you about 15 minutes to make.
You're done! Your starving boyfriend is going to make it to tomorrow!
Pour yourself some wine, light a candle and Bon appétit!
